Definition: Degustation (in short): The art of tasting food.
Until Googling its very definition (Yes, sadly, I did. In all fairness, it was to find out its French derivative.), I’d never considered myself an artist. But apparently, where degustation is concerned, I am a true talent. My gift exactly, you ask? The careful, appreciative tasting of foods – it’s an art form I swear.
In showing off my creative flair, putting it out on the table (one to be topped with eight, or preferably more, courses) for the whole of Brisbane to see, I hotfooted it around town to seek out the best degustation menus.
After much trial or tribulation (talk about first world problems), I think I’ve nailed the two best degustation menus this metropolis has to offer.

Urbane | Brisbane CBD
With intricate and carefully crafted food, Urbane continues to tantalise the tastebuds with their degustation delights. With the option of 4, 7 or 11 courses, you’ll have no trouble finding something to tickle your fancy.
Using local and national seasonal produce as a starting point for their dishes, they will both impress and excite the palate. Based on both European and Asian traditions and influences, you’ll find menu items like duck with mandarin, jasmine and wiltof, and rainbow trout with paprika, yoghurt and quince. Not to mention, one of my favourite sweeties - honeycomb with goats cheese, passionfruit and sea salt.

Queensland’s first three hat restaurant and awarded Restaurant of The Year by Queensland Good Food Guide… you know it’s going to be impressive. The Ryan Squires philosophy is to serve what is best on the day.
Whether it’s a fresh catch of sardines or recently discovered aromatic quinces, opening the menu brings a similar sense of excitement to tearing open your presents at Christmas. Expect deliciously eccentric dishes like blue swimmer crab with macadamia and coffee. Challenging your tastebuds, they always manage to make the most obscure of flavour combinations happily marry.
