The verdict
Joining the impressive line up at Barangaroo, Untied Rooftop is about to become one of the best rooftop bars in the city. It’s the only rooftop bar in the precinct, so it’s appropriate that we’ll start with the view and talk you all the way through to the cocktail list—there’s a lot to get through.
Here, they’ve taken the Australian theme right to edge, managing to stay well on the chic side of the spectrum and not a clique in sight. The colour palette of bold tropical tones pairs perfectly with the fruity cocktails and a modern take on classic Australian dishes. As is classic of the Aussie culture, Untied Rooftop doesn’t take itself too seriously, oozes the laid back North Queensland vibes, while still telling the story of sophistication and quality.
The menu is designed to share, featuring light bar food and contemporary larger plates. Taking advantage of the freshest local seafood available, the raw bar is serving up dishes like snapper with finger lime, ginger, chilli and puffed white rice or cobia with fermented chilli, avruga and persilan. But it wouldn’t be an Australia-proud bar without a BBQ and because hanging out on a lush rooftop bar is exhausting, this is where you’ll find the more substantial dishes. The wood-fired grill will serve Australian classics, with a modern twist, like the lamb with honey, native mint, asparagus, sorrel and goats curd.
The cocktail menu has been designed with the tropical theme in mind and our top picks are the sweet Captain Harlock’s Lost Treasure (Bulleit bourbon, Bundaberg Small Batch rum, Falernum, pineapple, lime juice, hibiscus syrup and Angostura bitters) and the Peg Leg, which is a twist on the classic Pina Colada.
