Sushi trains are cool and all but packing a conveyor belt with different varieties of cheese and you’re scoring genius status in our books.

If cheese is your thing, you’ll want to go ahead and book yourself a flight to London stat because The Cheese Bar is making all of our dairy-filled dreams come true.

The restaurant, which first opened its doors in trendy Camden, is known for producing a drool-worthy array of cheesy eats, slinging everything from goat’s cheese, walnut and honey toasties to perfectly crumbed mozzarella sticks and blue cheese raclette.

But, not one to rest on their laurels, the team have upped their food game by opening Pick & Cheese, an actual heaven-sent cheese train, at Seven Dials in Covent Garden.

The conveyor belt is 40 metres long, allowing diary-lovers a front row seat while choosing between 25 local cheeses. Think melt-in-your-mouth bites like Nottinghamshire stilton paired with a chocolate and oat cookie, Yorkshire pecorino with lemon meringue or Devon cheddar with tomato relish. You can also snag a plate of smoked chorizo or bresaola off the conveyor to beef up your meal.

You can wash that all down with local craft beers and a selection of French, Spanish and Italian wines. Sweet tooths can round out the whole experience with a blue cheese soft-serve with pear coulis, honeycomb and chocolate shavings—trust us, it just works.

Here’s hoping The Cheese Bar take their game-changing eatery international, until then, we’ll see you in London.
