There's no doubt about it—ANZAC Day is going to be a whole lot different than usual this year. But while we won't be able to attend an official service, it’s never been more important to remember our ANZACs and those they left behind, as charities like Legacy strive to continue looking after their widows and families left behind.

This year, whether or not you still get up at dawn, you can keep up the ANZAC spirit by joining Legacy's ANZAC Biscuit Bake Off and raising funds for Legacy, who won't be able to fund raise through parades, badge sales and services due to COVID-19. But to get you going beforehand, bake up this recipe for macadamia and maple ANZAC granola from Miss Bliss's Jacqui Toumbas for a sweet start to the day.

  • 3 cups oats
  • 1 cup spelt flour
  • 1 ½ cups desiccated coconut
  • 230g coarsely crushed macadamias
  • ½ cup pure maple syrup
  • 3 tbsp coconut sugar
  • 1/3 cup water
  • 1 tbsp olive oil

  1. Preheat oven to 160 degrees celsius, fan forced.
  2. Prepare a baking tray with grease proof paper.
  3. Combine all the ingredients in a bowl and combine with hands.
  4. Spread the oat mix on the tray over the grease proof paper.
  5. Use your hand to ‘scrunch’ the mix to form clusters.
  6. Cook in the oven for 20-25 minutes.
  7. At the halfway mark, take the tray out and carefully stir the mix so it bakes evenly.
  8. Let cool completely before storing in an airtight container.
  9. Serve with fresh fruit and yoghurt.
