The best part is that smoothie and acai bowls are super quick and easy to make, so if you’re thinking about skipping breakfast cos you’re just soooo busy, then think again!

Street Organics’ acai bowl is one of the best healthy breakfast recipes we’ve tried, so we got the team to spill the beans on how to make it!

Ingredients

•    3 frozen bananas
•    3/4 cup frozen blueberries
•    1 tablespoon acai powder
•    1/4 cup water
•    1-2 tablespoons each of frozen blueberries, coconut flakes, chia seeds, goji berries and macadamias

Method

1.    Place the first four ingredients into high-powered blender and blend until smooth.
2.    Decorate with garnishes and don’t be afraid to get creative!

With a soon to launch web-series (coming mid-April!), Anna made time to create an exclusive acai bowl recipe for TUL readers. This healthy breakfast is lots of fun to make…and eat!

Ingredients

Granola Soil | Prepare the night before

•    1/2 cup raw cashews
•    1/4 cup raw almonds
•    1/4 cup pepitas
•    1/4 cup sunflower seeds
•    2 tablespoons coconut oil
•    2 tablespoons coconut flower nectar
•    2 teaspoons raw cacao powder
•    Small handful dried blueberries
•    1 teaspoon raw cacao nibs
•    1 teaspoon chia seeds

Acai Mix

•    200g frozen acai
•    1 medium-sized frozen banana
•    1 tablespoon agave syrup
•    1 tablespoon coconut milk
•    1 teaspoon lucuma powder

To Garnish

•    2-3 sprigs of fresh mint
•    Edible flowers (violas work well)

Method

Granola Soil

1.    Preheat your oven to 135 degrees Celsius before chopping the cashews and almonds into small pieces, and combining in a bowl with the smaller seeds. Add the raw cacao to the mixture and stir.
2.    Place coconut oil and coconut flower nectar into a microwave-safe bowl, and microwave on high for 30 seconds, or until both are melted.
3.    Add the coconut oil and coconut flower nectar mix to the nuts and seeds and stir until all dry ingredients are coated.
4.    Line a baking try with baking paper before pouring the mixture into the tray and baking for 30 minutes, stirring occasionally.
5.    When the granola is brilliantly brown, remove from oven and leave to cool for 5 minutes. Refrigerate overnight.
6.    Just before serving, break up the granola into small chunks and mix through dried blueberries, raw cacao and chia seeds.

Acai Mix

1.    Place acai, banana, agave, coconut milk and lucuma powder into a blender, and blend until it has a smooth but thick consistency.

Terrarium Assembly

1.    Cover the bottom of a small glass bowl with a thin layer of granola soil.
2.    Pour the entire blended acai mixture on top of the granola soil before covering the acai with another layer of granola soil.
3.    Plant a few sprigs of mint in the granola soil, as well as some edible flowers and then serve immediately. Enjoy!

Green Tea-ser Smoothie Bowl

When it comes to matcha powder, it doesn’t get much better than Matcha Maiden! Leading the matcha charge of late, the Matcha Maiden team are passionate about showing how versatile the green tea powder can be with a host of super tasty and healthy breakfast recipes under their belt. Our fave is their smoothie bowl recipe, the Green Tea-ser, a creamy vitamin-packed brekkie option. So easy, you could almost make it with your eyes closed!

Ingredients

•    1/2 to 1 teaspoon Mix N Matcha powder (depending on how strong you like your matcha)
•    2 cups of coconut water, almond milk or coconut milk
•    1 handful spinach
•    1 handful banana, mango, kiwi or your fruit of choice
•    1 dollop of yoghurt
•    1 handful of ice
•    Superfood sprinkle of your choice (we love chia seeds, desiccated coconut and acai powder)
•    Extra toppings, e.g. berries, nuts, seeds and/or nut butter drizzle

Method

1.    Place all your ingredients, apart from the superfood sprinkle and extra toppings, into a blender until thick and creamy.
2.    From there you can decorate your Green Tea-ser smoothie bowl whichever way you like—add a little superfood sprinkle here, a little extra toppings there, and voila! A match(a) made in heaven.
