How To Make An Epic (And Easy) Pumpkin Pie!

We have a lot to thank America for: all the HBO series, New York City and Netflix. Another thing pretty close to the top of the list is pumpkin pie. Pumpkin pie is the perfect warming winter dessert and the sweet smoothness of the pie filling contrasted with the crunch of the crusty pastry is heavenly.

With American 4th of July celebrations on the horizon, we’ll be celebrating with this all-American winter-time staple. So here’s a delicious pumpkin pie recipe that’s as easy as…pie.



1 1/2 cups pumpkin puree (any pumpkin)
1 cup cream
2 eggs
1/4 cup brown sugar
3 tsp spices (2 tsp cinnamon and 1 tsp each ginger, cloves, nutmeg)


1 1/4 cup flour
1/2 cup butter cubed
1/4 cup ice water
1/4 tsp salt


Before we start, let me just say, making the pastry makes the pie…and it truly is easy. Truly!

Step 1:
Make the pastry: Combine the flour, salt and butter in a mixer until it resembles breadcrumbs. Slowly add the water and knead together into a smooth ball. Roll out the pastry dough and put into an oiled pie tin. Pop the pastry tin into the fridge for 30 minutes to set.

Step 2:
Make the filling: Mix the sugar, eggs, cream, spices and pumpkin puree together in a bowl or mixer until smooth.

Step 3:
Bring it All together: First, blind bake the pastry in the oven for 10 minutes at 180 degrees. After that pop the filling into the pastry and cook on 220 degrees for 10 minutes to set the mixture. Then turn down the over to 150 degrees and let it cook slowly for around 30 minutes.
