Oh. Em. Effing. Gee. These buffalo cauliflower tacos with blue cheese sauce are probably the best thing that will happen to you this month. Holly Nicholls AKA The Wandering Matilda knows the way to our hearts is buffalo anything with blue cheese sauce, and this time she's really done us a solid by making them with cauliflower, one of our all time fave vegetables.
Do yourself a favour and cancel your dinner plans, hit the shops and whip these babies up stat!
BLUE CHEESE SAUCE
Heat your oven to 180 degrees and line a baking tray.
In a large bowl, combine the garlic powder, paprika and breadcrumbs. In another large bowl, whisk the eggs a little using a fork, then add the cauliflower florets and stir through.
Transfer the eggy cauliflower to the bread crumbs mixture and evenly coat before placing them on your baking tray.
Bake the cauliflower for 15 minutes or until the florets are cooked through and charred. While they’re in the oven, mix together the sriracha, hot sauce and olive oil and leave aside.
In a cup, mix together the blue cheese dressing ingredients and leave aside.
Once the cauliflower is cooked, pour the hot sauce mixture over all the florets.
Serve with the tacos and blue cheese dressing and top with coriander. Soooooooo yummy.
