The history of the lamington is a bit complex, with Aussie and NZ both laying stakes to coconutty cake goodness. Just like pavlova, Weetbix and Russell Crowe, we might never know for absolute certain.
But look…Melba at The Langham is serving a lamington *buffet* on National Lamington Day so, for this round, we’ve got to hand it to Australia. Also, who knew there was a National Lamington Day? We would’ve totally taken more advantage of this every year.
On Saturday 21 July, you’ll get the chance to feast on the roadside bakery favourite, only glam. Varieties will include “Lemingtons” (tangy lemon lamingtons...we wish we had come up with that pun ourselves). There’ll be Belgian chocolate ganache lamingtons with Ghana choc nibs, raspberry lamingtons, orange lamingtons and a white chocolate and passion fruit lamington, among others.
Dip us in chocolate and roll us in coconut, we’re here for it.
