When the winter months roll in, there are a few old faithfuls that we turn to every single time—and we aren’t just talking about our doona, although that is a fave. We’re talking about cocktails, people. Because, when the sunshine decides to abandon us for yet another year, we take comfort in the fact that great food and even better cocktails are always there for us.

Now before we get to the good stuff, we want to remind you that if you’re going to treat yo’self to a few cheeky cocktails at home, then you’ll want to invest in the best. You’re worth it—trust us. If you’ve never thought about drinking premium rum, you absolutely should. It’s super versatile and the aged rum adds loads of flavour to any drink it touches.

That’s why we’ve teamed up with Appleton Estate Rum because—unsurprisingly—they know a thing or two about premium cocktails (Jamaican cocktails, to boot!) and these three will keep you warm all winter long.

#1 Appleton Estate RAW

The Appleton Estate RAW is responsible for keeping the summer vibes coming in strong all winter long (thank us later).

Ingredients:

30mL Appleton Estate Signature Blend
15mL Appleton Estate Rare Blend
25mL fresh lime juice
45 – 60mL freshly pressed sugar cane juice (depending on how sweet you like it)
4 to 6 leaves of fresh lemon myrtle

Method:

Combine all ingredients into a shaker and shake hard with ice, before fine straining into a short glass over large block of ice or good quality rocks. Garnish with a few leaves of fresh lemon myrtle and a spray of wray and nephew lemon myrtle tincture to up the fancy factor.

#2 From Jamaica With Love

When you can’t afford a holiday, but still wish you were laying on a beach in the sun—make this.

5mL Luxardo Maraschino Liqueur
20mL lime juice
30mL pineapple juice
10mL Hibiscus syrup

#3 Ship To Shore

No Caribbean holiday would be complete without a fruity peach, passionfruit and rum cocktail—also an average Friday night for anyone in denial over winter.

Ingredients:

45mL Appleton Estate Signature Blend
15mL Grand Marnier
15mL lime juice
30mL Charlie's White peach & passionfruit juice
10mL Monin Orgeat syrup

Method:

Add all ingredients into a shaker with plenty of ice, shake it all up and then fine strain into martini style glass. Garnish with an orange twist and cherry on a skewer to impress all of your mates.
