One of Sydney's best restaurants, Icebergs, is turning Japanese next month as part of Good Food Month and if you’re a fan of slurping ramen, then this will be right up your alley. Specifically, the dinners will consist of 6-courses, celebrating the skills and techniques of Japanese cooking with dishes like tempura asparagus with grilled prawn dashi and green onion and raw tuna with uni, caviar and ginger.
But don’t worry guys, we know what you’re really here for, so you’ll be pleased to know that there will also be a pork neck ramen, papanui egg, laver and pickles. To sweeten the deal, each dish will also be paired with drinks from the sake trolley.
Head Chef Monty Koludrovic is super excited to bridge the gap between his typical Italian dishes and Japanese cuisine, since as far as he’s concerned, they share so much though their food culture. Both are blessed with a good foundation of rice, noodles, beautiful fresh seafood, raw and cooked beef, vinegars, alcohol and ferments. We aren’t experts, but those sound like some pretty solid dinner building blocks to us.
