Here’s Where You Can Sip Sustainable Cocktails Straight Outta Shoreditch This Month

Icebergs is one of (many) magic venues in our fair city that will almost certainly spark thoughts such as: why would I ever want to leave this spectacular place? Why endure those excruciating long-haul flights when Sydney basically has everything anyone could ever want? Ok, ok—the world beyond our sparkly shores is actually amazing. But seriously, have you seen Icebergs at sunrise?

Well, in an effort to bring a little of the best of the rest of the world to Bondi, the culinary legends at Icebergs have shipped over UK bartender Matthew Whiley. He’s a superhero of all things sustainable and seasonal and has won lots of awards for his creative, simplified approach to cocktails.

He also runs one of London’s coolest new bars, which is slated to score a spot in the World’s Top 50 Bars next month: Scout in London.

As part of Iceberg’s World Class series, Matthew will be pouring drinks beachside for one night only. Scout’s menu changes daily and features fresh produce from foragers, farmers, and house-made ferments alike. They’re quite serious about the concept of living off the land too—the menu for the Shoreditch bar is segmented by ‘tree’, ‘overground’, ‘plant-bush’, ‘underground’ and ‘sea’ with three cocktails and one snack for each category.

In Sydney, you can expect drinks to be made up of locally foraged things (assuming because it'd be pretty damn tricky to get things like fermented birch sap through Aussie customs).

Rest assured, we’ll still get to sample Matthew’s knack for unusual sounding ingredients: on the menu will be ‘Farmers Market’, a concoction of Don Julio Blanco, sweet corn distilled Ketel One, mushroom and peach. The ‘Kolb Bellini’ is made of sparkling cider, miso caramel, Talisker whisky, apple marigold Ketel One and cinnamon vinegar.

If those flavours aren’t enough for you, snacks for the night will be prepared by Iceberg’s head chef, Monty Koludrovic.
