A concept store devoted to coffee, St Ali's Sensory Lab is set to open this October on Bondi's Hall Street. These Melbournian masters of coffee, roast their own beans and currently have a number of outlets across Melbourne and London.
In only good news, the first Sydney outpost, Sensory Lab, will offer their traditional espresso as well as alternative processes (syphon, pour over and cold drip), all extracted on state-of-the-art equipment.
Details are still in the works—but we can confirm the space will be fitted out by Aesop store designer Zenta Tanaka, with creative direction by Richard Brownfield, and will house education sessions along with seating for 35 patrons.
The new tasting space and café is a collaboration between Salvatore Malatesta (owner of Melbourne's St ALi North and South); high-profile Sydney barista, Emily Oak; and World Barista Championship finalist and Australian Barista Champion, Matt Perger.
