Sydney’s newest rooftop bar, Untied Rooftop, moved into Barangaroo last month and automatically had our attention. As the inquisitive foodies—and avid cocktail fans—that we are, we decided it was absolutely necessary to head down (errr, up) and get the low down. We know, we’re super thoughtful like that.
When you step foot into Untied Rooftop, you’ll immediately notice the tropical decor that clashes, in the best possible way, with the industrial high rise buildings cocooning the bar, taking you from those long day in the office feels, to that beach holiday you totes deserve.
So what did we do? Well we headed straight to the bar, as any sane person would, and got stuck right in to the cocktail menu. First up was the Flamin’ Galah, because #straya, and it’s a mix of Jinzu Gin, homemade ginger soda syrup, fresh watermelon and lime juice. It’s basically summer in a glass and a solid start to our tour of the cocktail list. While we waited for the second round to arrive—more on that in a minute—we settled into one of the flamingo pink booth seats and ordered a few share plates.
The food menu has been designed to take full advantage of Sydney’s coastal locale; serving up simple and fresh seafood that hasn’t been messed with. We decided to go for the raw trifecta, starting with oysters, served natural and straight up. Next we moved on to the snapper with finger lime, ginger, chilli and puffed rice, before capping it off with the ocean trout, served with with cumin, orange and golden trout row.
In case you’re wondering (we’re sure you were), it was around this time that we decided to turn some serious attention back to our bestie, the cocktail list, grabbing the popcorn prawns on the way. The Australian Antidote was calling our name, because a cocktail that combines Bulleit Bourbon, Monin passionfruit syrup, fresh lime juice, a dash of Pimento bitters and a syringe of honey water sounds like a solid life choice. The syringe of honey water was the ultimate choose-your-own-adventure cocktail addition, because it helped you make it as sweet—or not—as you want it.
All of that scoffing and quaffing made us tired, so it was only logical to head home like the responsible adults that we are. Jokes, you should know us well enough to realise that we couldn’t end the night before ordering the Untied Rooftop Espresso Martini, which is a classic mix of Archie Rose Vodka, Kahlua, espresso and sugar syrup.
