Hyde Hacienda Sydney Bar + Lounge
Inspired by the grand plantation-style architecture of Cuba, Hyde Hacienda Sydney Bar + Lounge is located in the Pullman Quay Grand at Sydney Harbour. Its prime waterside location isn’t wasted with jaw-dropping indoor-outdoor architecture featuring large windows and uninterrupted views of the Harbour Bridge.
The interior plays on the luxe vintage hotels of the 1950s in Miami and the plants that adorn (almost) every single surface only add to the botanical feel. There are even plants covering much of the ceiling.
The food and drink offerings match the Cuban feel, with noteworthy drinks including the campfire espresso martini loaded with housemade marshmallow vodka, Kahlua, marshmallow syrup and coffee; and the chia daiquiri with rum, Belzasar, lime juice, Monin strawberry syrup and sparkling wine. On the food side of things, hit the chilled tiger prawns on ice and don’t even
get us started on the cocktail sauce. It’s brilliant.
If you’ve brought the crew with you, we also suggest you go hard on the prosecco keg, fit for 10 of your thirstiest mates. It has been dubbed the “Get Tropicool” and includes said prosecco as well as mango juice, passionfruit puree, orange juice, soda water and cranberry juice.
Hyde Hacienda Sydney Bar + Lounge also throws a Happy Hour that can’t be missed from Wednesday to Friday (4pm – 6pm) and a Ladies Day every Saturday and Sunday (4pm – 6pm), which means 20 per cent off cocktails.
And these guys now serve up on hell of a bottomless brunch too. We’re talking South American-style, with free-flowing Chandon Rose from Thursday to Sunday (bookings start from 11am with the last booking 2pm) and you’ll need a minimum of five to book online.
