Silvester’s is Sydney's newest contemporary Australian restaurant, and like the famous Sylvester Stallone (we're talking about the O.G Rocky here guys), this venue is rising to the challenge. Located in the swanky new Marriott, in Sydney's CBD, Silvester’s is paying homage to two of the city's earliest butchers, the ‘Silvester Brothers’, who once owned the space that now houses the restaurant.
With earthy tones, the 120-seat restaurant dishes up more than just tasty eats. You can expect a whole lot of entertainment coming to you direct from the open kitchen, which sounds bloody great to us—dinner and a show anyone? Each dish is created with sustainable produce (we love) and fresh ingredients (we love some more) at its core, like the Yellow Fin Tuna poke, quail egg with soy & ginger, and we can't forget the Byron Bay Berkshire pork belly.
The wine list is packed with some of Australia and New Zealand's best drops, along with an impressive selection of wines by the glass, and the bottle (don't worry, we got you). If brews are more your thing, there are 17 on tap, it's probably best you just start at the top and work your way down TBH.
