Byron Bay is no stranger to incredible dining and dreamy coastal escapes, but this summer the Northern Rivers' hospitality scene is heading for the water.

The just-launched M.V. Jasmine is an 18-metre, multi-level luxury vessel redefining riverside indulgence with Brunswick's first floating cocktail bar and dining experience.

The Mediterranean-inspired M.V. Jasmine is now cruising the Bruns River, serving handcrafted cocktails, curated menus from rotating local chefs and a soundtrack of live sets. Expect golden-hour margaritas, seasonal plates that champion Northern Rivers producers and a warm, buzzing vibe.

The vessel itself is a showstopper; previously the Brunswick River Cruise, owners Helen Caruana and Dean Fox have completely transformed it into the M.V. Jasmine over two years, with careful consideration to quite literally every detail. Trust us, you'll notice the considered details when you're onboard (even the toilets are beautiful).

Purpose-built from the hull up, Jasmine stretches an impressive 18 metres across two levels, accommodating up to 70 guests. Highlights include a top-level open-air deck with 360-degree views and a retractable canvas rooftop for all-weather sunset watching. Inside, a marble wraparound bar, striped booth seating, and purpose-designed open-gallery interiors that channel modern Mediterranean elegance.

The curated Mediterranean-inspired menu from Maria's matches the stylish venue and champions fresh, local produce. You'll receive either a prawn roll or a cheese plate with focaccia upon arrival and then dive into the likes of anchovy toast, crudo with black caviar, spanakopita and tiramisu. Dreamy.

Of course, you need a drink when dining on the water and the considered list roams from a Byronocello Spritz (Byroncello, vermouth, olive brine) to a Jungle Bird (Bizzaro, aged rum, pineapple) and about everything in between. The bar is well-stocked with wines, beers, spirits and bubbles if that's your preferred tipple.

But here’s where it gets really exciting: private charters. Whether you’re planning a milestone birthday, brand launch or a wedding, Jasmine takes your event and reimagines it on the water.

With room for up to 70 guests across two luxe levels, inclusions like a marble wraparound bar, seasonal canapé service, premium sound system, and customisable layouts mean no two cruises are the same. Want a live band on the top deck? A locally shucked oyster bar? A golden-hour dinner under the stars? It’s all on the cards.

Of course, weekly sunset, brunch and lunch cruises between two-three hours will be on offer, alongside ticketed Summer Series events in collaboration with cult Byron names like Raes, The Hut, Marias, Luna Wine Store, Flo Records and Azteca Margarita.

We love that the M.V. Jasmine team are dedicated to championing local with rotational chefs, restaurants, producers, bars and venues all from the local Byron region and slightly further afield. Upcoming collaboration events with local venues include Light Years On The Water and The Hut On The Water. Ooof, summer is looking good.

Whether you’re celebrating something big or simply chasing the magic of a Byron sunset with a spritz in hand, the M.V. Jasmine promises an escape that’s refined yet relaxed; and one you’ll be bragging about long after you’re back on shore.
