Beechmont Estate Is The Scenic Rim’s Dreamiest Country Retreat

If cosy nights curled up by a fire, chef-hatted degustations, baths with a view and fresh country air sound like your idea of the perfect weekend away, then you need to book yourself a stay at Beechmont Estate, stat. A sprawling retreat nestled amongst the rolling hills of the Scenic Rim, this luxe accommodation is the stuff of fairytales. 

Just an hour and a half away in Beechmont, the estate calls a 75-acre country farm home, surrounded by endless green paddocks. There’s three kinds of accommodation to choose from—16 cosy cabins (some with stunning views over the hinterland), three incredible Luxury Pavilions and the staggeringly luxurious Owner’s Residence, which is perched at the top of the estate and features four bedrooms, an infinity pool and spa, indoor and outdoor fireplaces and a host of inclusions that will make you feel like an A-lister. 

Our choice though (for those of us who can’t afford to drop $10,000 on a two-night stay), is the Luxury Pavilions. Featuring a private deck, a lounge area with its own fireplace and a massive free-standing bath, the best part of these generously-sized cabins is the floor-to-ceiling windows along the entirety of one wall overlooking the rolling hills outside—yes, even in front of that bath. Who doesn’t want to wake up to a misty country view from your plush king bed?

A must-do during your stay is of course a dinner at on-site restaurant, The Paddock. This chef-hatted eatery has been winning accolades left, right and centre for its paddock-to-plate fare since it opened. We highly recommend jumping on a tour of the kitchen garden with Executive Chef Simon Furley beforehand, where you’ll get a sense of the ethos behind the restaurant, and find out where the hyper-local produce on your plate comes from. 

Once you’ve taken your seat, the three-course option is the way to go, with an uber creative menu that changes weekly based on seasonal produce and availability. What doesn’t change though, is the smoky flavours created by cooking over fire, the no-waste methods that utilise every part of every ingredient and the sigh of satisfaction you’ll let out at the end of your meal—hopefully before a nightcap in front of the roaring fire over by the bar.

During your stay you can also take advantage of experiences like massages and facials at the day spa, wine and cheese tastings, gourmet picnic hampers to tuck into at a shady spot on the grounds and cocktail masterclasses at the bar. Lamington National Park is also just a few minutes drive away if you’re up for a hiking adventure—or you can just retreat to your private deck with a bottle of wine for the afternoon, it’s up to you.
