The Bar Evelyn crew can do wrong and nothing affirms this more than the opening of sister venue, Cadillac Supper Club on the former Scottish Prince site in Palm Beach.
Headed up hospitality legends Mark Catsburg and Nick Stanton, Cadillac is an homage to the Euro-inspired supper clubs and neighbourhood bistros of New York and Los Angeles—reimagined with a Gold Coast twist, of course. Straddling the line between restaurant and bar, Cadillac is a space where the emphasis is on relaxed, unhurried dining and drinking, with a nostalgic nod to simpler, bygone days.

Blending rock’n’roll retro cool with intimate charm, step inside and you’re wrapped in warm, moody lighting, with rich wood panelling and muted terracotta walls contrasted by black and white chequered tiles and burgundy-hued booth seating.

Perch up at the intimate bar seating area, nestle into a booth or book the ten-seat private dining area, the walls lined with artwork hinting at a flair for the eclectic. Taking centre stage, the bar is well-stocked with bottles that promise serious cocktail craftsmanship, all beneath the watchful shine of a disco ball—ready to reflect the good times.

Nick emphasises the menu is ever-changing and evolving to not only suit customer’s tastes and the seasonality of produce, but quite frankly, to keep things interesting. We dig it.
On the current menu, you’ll notice nods to European influences with a focus on smokey flavours from the Josper charcoal grill. Start small with Coffin Bay oysters, sourced from Miami Fish Market, and the now-iconic charred red pepper dip with fresh cucumbers, paprika oil and housemade sourdough flatbreads. Trust us, this is the prettiest dip you’ll ever dive into.

We need to talk about the steak tartare with cornichons, egg yolk and house made potato crisps. Specifically about you ordering it. And while we're talking about steak, you would be remiss to visit Cadillac without ordering the steak frites with pomme frites and tarragon pepper sauce. It can only be improved when devoured with a house martini—a little dirty and always ice cold.

Head bartender Finn’s standouts are the Cadillac Margarita, a muddle of Altos Reposado, lime and Grand Marnier, and the Boulevardier, the whiskey-based cousin of the negroni with a house whiskey blend, sweet vermouth, Campari and orange. Of course, if vinos or beers are more up your alley, you’re well covered with an extensive local beer and Euro-influenced wine list.

What we love about Cadillac is that as the evening unfolds, it transforms into a vibrant late-night bar venue with vinyl-spinning DJs open until midnight—a rarity in Palm Beach. Perch up on a bar stool, order a few rounds of petinis (yes, mini martinis and yes, they’re delicious) and you’re in good hands.
