Hotel Marvell Is Byron’s First Five Star Luxury Hotel—And It’s Seriously Stunning

Byron Bay is welcoming an unprecedented level of luxury with the opening of Byron Bay’s first ever five-star hotel this month. At Hotel Marvell, the boundaries between luxury and comfort meld harmoniously, inviting you to indulge in an one-of-a-kind stay characterised by opulence and tranquillity.

Situated in the vibrant heart of Byron, Hotel Marvell is much more than accommodation—it boasts Byron’s first rooftop pool and bar and an exquisite seafood-centric restaurant, Bonito. The boutique hotel boasts an array of high-end accommodation, including 16 hotel rooms, 6 suites and 2 two-bedroom hotel rooms.

The architectural splendour of Hotel Marvell is a testament to the creativity of Harley Graham, an award-winning Byron architect. Warm coastal tones are complemented by terracotta hues and blonde wood; greenery pops up throughout and Graham’s unique architectural flair perfectly encapsulates Byron’s vibrant yet laid back essence. The rooms are decked out with top-of-the-line amenities including electric black-out blinds, sensored lighting and quite possibly the softest towels we've ever tried.

Among the hallmark features of Hotel Marvell, a stunning pedestrian laneway with high beams, open-air spaces and overhanging palm trees invites you in. And once you’re there, you’re certainly going to stay. Almost every detail of this architecturally-designed hotel has been hand crafted and selected to create an incomparable retreat—Hotel Marvell is undoubtedly one of the most elegantly designed hotels we’ve had the pleasure of experiencing.

This visionary project is brought to life by property trailblazers, Scott Emery and Scott Dider, whose love for Byron Bay and steadfast commitment to the region resonates in every aspect of Hotel Marvell. The hotel proudly emphasises a local-first sourcing philosophy, from the fresh coffee sourced just up the road at family-owned Zentveld’s Coffee; to the hand crafted in-room mugs by Byron pottery arist Brooke Clunie; to the artisan spirits behind the bar from Northern Rivers-based Winding Road Distillery Co.

The premier property has a strong ethos of promoting sustainability and reducing environmental impact—they even proudly champion Australia’s first completely compostable coffee pods, courtesy of Zentveld’s Coffee. The mission of sustainability manifests profoundly in the epicurean food offerings, underscoring a dedication to sourcing local, high-quality ingredients.

Hotel Marvell’s flagship restaurant, Bonito, is headed up by Chef Minh Le who cut his teeth working at a plethora of esteemed establishments around Australia, including Spicers Peak Lodge and Crystalbrook Byron. At Bonito, Minh Le fuses his heritage and passion for seafood and plant-based cuisine, incorporating locally sourced ingredients from trusted suppliers.

Bonito’s menu encompasses a slew of creative takes on the flavours of the sea and land, with delicate dishes like sashimi salmon with compressed apple, shiso and split coconut emulsion and an impressive dried age whole fish with chilli tomato salsa taking centre stage.
