The hotel proudly emphasises a local-first sourcing philosophy, from the fresh coffee sourced just up the road at family-owned Zentveld’s Coffee; to the hand crafted in-room mugs by Byron pottery arist Brooke Clunie; to the artisan spirits behind the bar from Northern Rivers-based Winding Road Distillery Co.

The premier property has a strong ethos of promoting sustainability and reducing environmental impact—they even proudly champion Australia’s first completely compostable coffee pods, courtesy of Zentveld’s Coffee. Hotel Marvell’s flagship restaurant, Bonito, is headed up by Chef Minh Le who cut his teeth working at a plethora of esteemed establishments around Australia, including Spicers Peak Lodge and Crystalbrook Byron. At Bonito, Minh Le fuses his heritage and passion for seafood and plant-based cuisine, incorporating locally sourced ingredients from trusted suppliers.

Bonito’s menu encompasses a slew of creative takes on the flavours of the sea and land, with delicate dishes like sashimi salmon with compressed apple, shiso and split coconut emulsion and an impressive dried age whole fish with chilli tomato salsa taking centre stage.
