A First Look Inside Padre Brewing Co., Miami’s Slick New Brewery
The Gold Coast is certainly no stranger to breweries, but every now and then there’s one that stands out. One with the kind of groundswell that happens when five hospo heavyweights finally open their dream venture they’ve been crafting for years.
To describe the groundswell as loud would be inaccurate. Resounding would suit. Perhaps even deafening.

Founded by long-time mates Mitch Carlin and Pete Morris, alongside hospitality veterans Aaron Wilson, Nathan Zukerman and JD (yes, the OG crew behind Ze Pickle), Padre Brewing Co. is the result of “decades of shared laughs, late nights and the search for the perfect watering hole”. And we think they might have just nailed it.

Padre Brewing is perched on Ozone Parade in the heart of Miami, where an eyecatching ‘BEER’ sign stands out like a beacon to patrons looking to quench their thirst for a quality brew and a great vibe.

The first thing you’ll notice is the scale. It’s huge. The venue is huge—catering just shy of 160 patrons—but somehow still packed with personality.
Every detail of Padre Brewing, from the custom uniforms to the weekly jackpot (IYKYK), has been thoughtfully designed to reflect the crew’s collective passions: skate, street, music, design and photography, all with a sizeable dash of attitude.

A hand-painted mural by Pete and his family brightens the sun-kissed beer garden, where lush greenery, curved concrete benches and sprawling communal tables make it dangerously easy to lose a few hours with your mates.

Inside, the atmosphere shifts into retro-cool territory. Warm timber accents are contrasted by glossy mosaic tiles and back-lit red-and-green shelving, stocked with nostalgic merch and quirky curios from the crew’s own homes (even old VHS tapes finally coming in handy). If Padre’s interior is a reflection of the team’s living rooms, consider me jealous.

Now of course, the beers. Honestly, Head Brewer Mitch Carlin says it best:
“Our purpose is pretty simple. We brew quality beer for people who care as much about the company they keep as the beer they drink. If it’s not good, we’re not about it.”

Padre is pouring serious flavour with 14 taps on deck, kicking off with a core lineup of Aussie lager, pale ale, IPA, French pale, cerveza and a few other crisp favourites. If wines and spirits are more your thing, you’re also covered on that front with some local brands.

In a move I love, Padre is skipping distribution altogether, choosing to brew in-house exclusively for the bar so the beer stays intentional and unmistakably theirs. And while distribution isn’t on the cards, the crew hinted that venue collabs might brew up down the line.

On the food menu, expect a tight edit of elevated pub classics, like chicken parmys, burgers and pizzas, and a selection of premium options like freshly caught salmon from Miami Fish Market and steak frites with a grass-fed 300gm sirloin.

What I love most is how passionately the team champions the idea of a space that genuinely feels as warm as it looks.
“At Padre, we care about two things: good company and great beer. We’re doing our best to create the perfect space for one, while making the other,” says Co-Founder and Brand Director, Pete Morris.

The result is a venue that feels authentically Gold Coast; sleek yet playful, design-forward but lived-in and absolutely primed to become your new favourite local.
