Blaire’s Bistro is the freshly revamped face of Mex Cartel in Burleigh Heads—your new go-to for laid-back eats with a gourmet twist.

Named after the owner's daughter, Blaire’s Bistro brings a cosy, family-friendly vibe to the heart of Burleigh, making it the perfect spot for a casual catch-up or lowkey dinner date.

At Blaire’s, they don’t complicate things—it’s all about the classics you love, done damn well. We’re talking flavour-packed, juicy burgers, crispy schnitzels that hit the spot, and ‘proper’ fish and chips (yes, we know that’s a controversial statement).

The star of the menu is undoubtedly the house-baked baby back ribs served with baked potato with sour cream or apple slaw with fries and smothered in your choice of sauce—whether you’re into bourbon BBQ, spicy Korean glaze, cajun maple, or honey soy, you really can’t go wrong. 

Blaire’s has also nailed the small plates game with their house baked focaccia and confit garlic butter, Sicilian tiger prawns in a white wine butter sauce and crispy fried calamari with garlic chips. 

Steak lovers, you can’t go past the 250g porterhouse steak served with French frites and café de Paris butter—it’s like a little taste of Paris, right in Burleigh.
