Now, there’s even more reason to hit the road—The Ducks at Hotel Brunswick, a highly anticipated culinary collaboration between the renowned Three Blue Ducks team and Hotel Brunswick, has made its debut this December. This Northern Rivers collaboration promises to combine famous pub hospitality and the Ducks’ culinary prowess.

Hotel Brunswick, already a beloved fixture for both locals and visitors, is taking things up a notch. Ducks’ chefs Darren Robertson and Andy Allen are joining forces with Hotel Brunswick’s Head Chef Loki Lynch and Group General Manager of Food, Ben Turner, to launch an elevated pub menu that champions local Northern Rivers produce.

Think quintessential Aussie pub classics like the humble schnitzel, chicken parmys, and beer-battered fish and chips—levelled up with a Ducks twist, of course—alongside more refined dishes like Australian bay lobster rolls, pickled octopus and prawn toast with nam jim. There will also be a new pizza oven pumping out loaded pizzas and flatbreads, perfect for pairing with a brew on a summer’s afternoon.

The drinks menu isn’t left out of the upgrade either with an expanded selection of 30 wines, a special focus on local hero Jilly Wines, and three distinct takes on the ever-popular margarita.

Whether you’re chasing classic pub vibes or a touch of culinary sophistication, The Ducks at Hotel Brunswick is set to deliver an unmissable experience.
