Palazzo Versace’s signature Italian restaurant, Vanitas, has re-opened after a twelve-month hiatus and it’s already shaking up the Gold Coast fine dining scene. Vanitas is unrivalled in sophisticated dining, with diners treated to a nine-course degustation menu that is a refined celebration of modern Italian classics, in a nod to the chefs’ European heritage.
Vanitas Head Chef Rodolfo Maliverni and Sous Chef Stefano Pennucci have crafted a unique, seasonal menu which artfully showcases authentic Italian flavours with native Australian ingredients. The menu has a strong focus on sustainability, amalgamating premium ingredients with those often overlooked, while also boasting a zero-waste policy. Delicacies like Hibachi veal, Sovereign lamb and prosciutto linguine are just some highlights on the re-imagined degustation menu.
Vanitas offers an extensive range of Italian wines carefully selected from premium regions of Italy’s wine landscape, in addition to a range of award-winning wines from Australia and New Zealand. If that wasn’t enough already, the venue itself is seriously opulent—you’ll feast while overlooking a sparkling lagoon and an exquisite 13-metre Italian painting adorns one wall.
