Is it a pancake? Is it a taco? It’s neither—it’s a paco! Project Paco is a food truck specialising in what can only be described as taco-shaped pancakes. Whether you’re into sweet or savoury, the friendly folk have your back. The menu features the likes of ‘chef’s favourite’ (chorizo, scrambled egg, red onions and sweet chilli sauce) and ‘berry chiacake’ (berry chia compote, whipped cream and smashed biscuit). You’ll be pleased to know Project Paco are all about fresh, ethically conscious food and source all their ingredients locally.
