Led by the award-winning architects at Woods Bagot and launched in October, the hotel renovation included two sparkling new venues. Aster is the handsome rooftop bar boasting seriously breathtaking views, and The Treasury is an all-day venue built into the hotel's grand and cavernous foyer.

The menu is inspired by space and the stars. There's a fiery comet reimagined as a martini, for example, which involves Never Never Triple Juniper gin and spice, served icy cold with "a flash of heat as it pierces our atmosphere". The Eclipse cocktail is a new take on the legendary Old Fashioned to new heights, with Diplomático Reserva Exclusiva Rum, Mitcher’s Bourbon, and stone fruits. To eat, the Riverina haloumi wrapped in jamon serrano and dusted with zhoug will renew your appreciation of haloumi. The lobster slider with xo mayo is also a must. Meanwhile, downstairs The Treasury bar and restaurant serves more substantial meals within the striking cortile of the original Sydney Treasury building. Surrounded by sandstone arches and lush greenery, The Treasury feels like a grand European lobby bar—and a best-kept secret, tucked away from the world outside. It's casual enough to drop in for a coffee or cocktail, but sophisticated enough to deliver main courses like a "rockpool" of regional seafood with Balmain bug, gulf prawn, scallops, octopus, caviar, and more.
