The Multi-Level CBD Bistro Serving Rigatoni Al Gin And Olive Oil Gin Tarts

Sakura coktails and dry-aged Wollemi duck infused with gin—if you’re a foodie, this should send your taste buds into an absolute whirl.

Turns out, the legends at Roku Gin are throwing down a spring dinner feast like no other at the multi-level CBD bistro Jacksons On George. If you’ve never been, you’re in for a treat. Jacksons host every dining sphere from a public bar and bistro with a carefully curated wine list, to a beaming rooftop that soaks up warm rays on any given day—right at the crux of Sydney’s historic The Rocks and bustling Circular Quay.

It’s the bonafide centrepiece of the Sydney Place dining precinct, so it should come as no surprise that flicking the famed venue’s upcoming gin-fuelled banquet into the group chat is an absolute no-brainer.

Together with Roku Gin, Jackson’s bistro head chef, Steven Sinclair, has crafted one-hell-of a bespoke four-course menu, with each mouth-watering dish infused with Roku Gin, and three cocktails to match (naturally) which feature the new Roku Gin Sakura Bloom Edition.

In terms of what you can expect, snacks begin with a refreshing hit of Sydney Rock Oysters, drenched with Roku Gin and tonic granita—something worth smacking your lips over. From here, you’ll be able to sink into a truly epicurean appetiser with Roku Gin-cured Ora King Salmon gravlax, green apple, dessert lime and sourdough crumpet. 

A crowd-favourite then rolls in, in the fine form of rigatoni al Roku Gin with fermented chilli and of course, a healthy dose of Parmigiano reggiano, all for good measure. Balance the tastebuds out with dry-aged Wollemi Duck, queen garnet plum, Roku Gin and juniper; and then fire up that nightcap with a dessert so good you’ll have dreams about it—a blood orange and Roku Gin tart pumped with crème fraîche and olive oil.

It’s all to celebrate the release of the very first and limited-edition Roku Gin Sakura Bloom Edition, specially crafted with Sakura petals and leaves. 

As for the sips on offer (all prepped with the aforementioned Roku Gin Sakura Bloom Edition), you’ll find an S&T with the likes of Fever Tree tonic; a Pink Sakura mixed with apricot, honey-fermented blueberries and lemon; and a sweet concoction of lychee, rhubarb and anise for a tasty Bistro Blossom.

The best bit? After you’ve filled your belly to the brim, you’ll get to take home a full-size Roku x Gin Grandiflora Sakura Bloom Edition fragrance. This beauty blends fresh botanicals and Sakura floral notes, perfect for spritzing yourself in spring.
