Dig Into ORA’s Incredible Limited-Time Food And Drink Pairing In March

Spicy scallop salad and toki highball Ora restaurant Sydney

When the scorching Australian sun is doing its thing, we're big fans of reaching for a chilled beverage to cool off. Our drink of choice lately? A light, bubbly and downright delicious Toki highball.

We challenged ORA's Executive Chef, Nobuyuki Ura, to create a limited-time dish that pairs perfectly with a refreshing Toki highball aka our new favourite drink. The result? A melt-in-your-mouth spicy scallop salad that you simply have to try—and then wash it down with a highball, of course.

Let us talk you through the limited-time dish. To start, juicy Hokkaido scallops are halved and topped with a moreish spicy mayonnaise before being lightly seared and added to a microgreens and tomato salad. The dish is then topped with lime juice, soy dressing, coriander and shichimi togarashi to create a salad packed with flavour that'll leave you wanting more. The best bit? It comes with a classic Toki highball, a perfect partner for your spicy salad starter.

New to Toki? It's a Japanese whisky from the legends at House of Suntory. The word toki means 'time' in Japanese and the spirit is an innovative blend of three whiskies from three renowned distilleries—Hakushu, Chita and Yamazaki that pays homage to both Japan's respect for tradition and its innovative spirit.

The Toki highball is simplicity at its best. Over ice, the drink consists of 30ml of Toki whisky topped with soda water and is served with a twist of lemon—refreshing, easy to drink, and most importantly, delicious.

Keen to try this match made in heaven? Head to ORA from Wednesday, 1 March till Friday, 31 March to try this tasty combo and see why everyone's raving about it.
