Hinchcliff House Are Serving A Summer-Long Prosciutto Party
If your dream summer involves Negronis, salty snacks and pretending you’re sunning yourself somewhere between the Dolomites and the Adriatic, clear your calendar. Principe Prosciutto has officially landed in Australia, and to celebrate, the Italian producer has teamed up with Sydney’s Hinchcliff House for a month-long Aperitivo takeover.
Across all four venues—Bar Mammoni, Grana, Apollonia and Lana—you’ll find a limited-edition menu built entirely around Prosciutto di San Daniele. Think: decadent snacks, playful cocktails and a whole lot of salty-sweet magic designed to make you forget you’re not actually in Friuli.

The Star Of The Show: A Prosciutto-Washed Negroni
The hero of the collab is the Principe Negroni, a smooth, umami-rich twist on Hinchcliff House’s cult classic. It uses Widge’s Gin fat-washed with Prosciutto di San Daniele—yes, prosciutto-washed gin—and is topped with a little skewer of cured goodness for good measure. It’s available at all four venues throughout the activation.
If you’re more of a spritz person, Bar Mammoni and Apollonia will also be shaking up the Melone Spritz (a rockmelon-prosciutto nod) and the Monte Highball matched with prosciutto butter and fig crostini. Each drink has been crafted to play nice with Principe’s signature flavours.
Prosciutto… Everything
Come hungry. Every venue is rolling out its own take on prosciutto-forward snacking, from luxe to casual to “abort the diet immediately.”
At Lana, things get theatrical with a tableside Prosciutto Trolley—thin ribbons of Prosciutto di San Daniele carved to order and served with warm Saltbush focaccia and whipped ssamjang butter. There’s also a grilled Abrolhos scallop topped with puttanesca and prosciutto-infused XO.
Bar Mammoni is leaning into street-style Italian bites with bao sandos, porcini arancini, prosciutto-topped pizza and a very snackable scacchiata dripping in black garlic butter.
Grana and Apollonia are bringing the indulgence with Quattro Formaggi Raviolo Fritto drizzled with truffle honey, plus plates of sliced Principe prosciutto paired with rockmelon, mascarpone and sorrel.
