The Verdict
A bar and bistro dedicated completely to Vermouth has opened at Barangaroo.
From the masterminds behind Surry Hill’s Bar H, Banksii will serve over forty varieties of Vermouth, for those who like it on the rocks, in a cocktail or traditionally, with tonic.
The Mediterranean inspired menu is designed to be shared, with a light, fresh approach, incorporating botanicals to match the iconic outdoor Sydney scene.
Smaller dishes involve succulent grilled prawns, kangaroo carpaccio and Banksii's own chicken pate, while larger dishes such as magnificent vermouth mussels (cooked in nettle butter) and glazed roasted duck (served with vermouth soaked native plums) work perfectly with a dirty martini (or two). There's also a ridiculous amount of oysters.
