Reinvigorating the once abandoned historical tyre factory, Bar Machiavelli Rushcutters Bay is an inspiringly new take on traditional Italian cuisine. Learning the ropes from older sibling Machiavelli CBD, owner Paola Toppi’s experience at Sciue Sciue Double Bay, and her general know how from living in a home packed with family Italian foodies, Bar Machiavelli already has all the makings of a restaurant favourite, before the doors even open.
With two glass rooms for antipasto and pasta making, the greatest thing about this new Italian gem is getting to eat both with your eyes and tastebuds. Made exclusively in-house, these signature menus change constantly and are made from scratch using traditional techniques. Just as lovingly made, take a seat at the bar, a golden metal-wonder complete with inventive and decadent drinks. Say hello to ‘The Prince Vs The Court’ barrel aged negroni and grappa, ‘La Dolce Vita’s’ prosecco, strawberry orange and lychee, and even a sneaky new Bellini every single month. Aaaand then it gets better, be sure to save room for their enticing dessert cocktail menu complete with a damn amazing Tiramisu Martini as you grab an eyeful of projections on brick-exposed walls around this renaissance inspired urban jungle.
