Sydney's era of new hotels has brought with it a collection of very excellent hotel bars—and Bar Morris is no exception.

Hidden within Hotel Morris (one of our favourite boutique hotels in Sydney), Bar Morris is a decadent 40-seat all-day diner and wine bar with a menu of polished Italian-inspired bites. 

Red velvet curtains, custom neon red pendant lights, and burgundy marble give the bar a distinct red wine glow.

Head chef Kezia Kristel (ex-Shell House Dining Room, Icebergs Dining Room and Bar, and Bennelong), is dishing out a menu that takes Italian favourites and applies an Aussie lense and top ingredients, with favourites like oysters with vermouth mignonette, burrata with sun-dried tomato sauce, spaghetti vongole, and a Wagyu steak with Cafe de Morris butter.

“My vision was to craft a menu that mirrors the playful energy of Bar Morris while drawing inspiration from Italy's rich love for simplicity and flavour while maximising our local ingredients," says Kezia.

As for the drinks list,  expect classic Australian and Italian wine producers including a few natural picks, a few takes on the martini, and Bar Morris' Negroni Series offering a handful of takes on the classic cocktail. The Negroni Speziato, with Chinese five spice-infused gin, is a must-try. 

The breakfast menu includes a sweet start with freshly piped ricotta cannoli, avocado on sourdough with Caprese salad and crispy prosciutto, and an Italian take on a ploughman's with fontina cheese, sopressa salami, giardiniera pickles, seeded bread and tomato chutney, while lunchtime offers focaccia and filled ciabatta and baguettes.
