Searching for a wine bar that'll subvert your expectations? Bar SOUL is Sydney's first Korean tapas bar. It's intimate, candlelit, and warm—with an impressive menu from a former Michelin Star chef.
From husband and wife duo Daero Lee and Illa Kim, Bar SOUL is the third venue for the SOUL Group, which also includes cult-favourite neighbourhood Korean deli, SOUL Deli, and hatted Korean restaurant, SOUL Dining.
The kitchen at Bar SOUL is headed up by former Bennelong chef Sunny Ryu, whose resume also includes time at Michelin Starred restaurant Ryunique in Seoul.
On the menu are classic wine bar snacks, with unexpected twists: scallop crudo with Korean ajo blanco, slow-cooked pork jowl with confit garlic puree, black rice, and jalapeno, and, for dessert, a chestnut tiramisu.
Wine is front and centre at Bar SOUL, with pairings designed by Illa. “Korean food is rarely associated with wine," she says. After exploring the offering at Bar SOUL, we wouldn't be surprised to see more of these ventures pop up across Sydney."

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
