The Verdict
From renowned chef Kylie Kwong, comes her new Sydney restaurant Billy Kwong in Potts Point. A modern Chinese eatery, the large space features dining-room seating, a bar, and exposed central kitchen. Retaining her philosophy to incorporate sustainably sourced produce and native Australian fauna in the menu, you can expect dishes like crispy saltbush cakes, steamed wallaby, pork and goji siu mai, and stir-fried spanner crab.
