The verdict

They've done it again – the people behind Bourke Street Bakery are pretty much royalty in the Inner West and they're extending their empire as far as they can reach. The Banksmeadow store is pretty amazing though because they've created an environment that aims to create as little waste as possible. But here's the thing – they haven't just said they're going to do it (like all of our New Year's resolutions that were out the door by the 7th of January), they've actually done it!

All organic waste is processed, converted into compost within 24 hours, careful purchasing and recycling means they're as close to waste neutral as possible. Enormous silos store the ridiculous amount of flour required to run a baking empire and the native garden is irrigated with recycled grey water. If you manage to find your way to the roof you might even find a beehive or five!

All of this environmental progress almost had us distracted from the pastries... almost. They are, of course, still serving up the incredible menu that you'll find across the board at Bourke Street's stores with all your faves.
