After 17 years serving French fare to the locals of Waverley, Bronte Road Bistro is taking on a full-blown rebrand, emerging as Bronte Road Fish. After countless years in the hospo industry, the team noticed a gradual shift in the market—a desire for more casual and flexible options. In response to that shift, their new era is all about what's easy, fast and downright delicious. 

"We wanted to create something fun and casual that is accessible to locals, beachgoers and visitors," chef-owner Matt Barnett tells Urban List. 

"It’s a simple menu, but we’ve focused on doing the small things well."

Stepping down from the fine dining podium, the seafood-focused venture will be more margarita slushies and crunchy potato scallops than high-end plates—but don't mistake that for a lack of care. Matt has spent hours attempting to create the perfect fish burger, and he reckons he might have just done it. 

"We tested countless variations until we got it right," Matt shares. 

"A soft potato bun, panko-crumbed hake, American cheese, iceberg lettuce, pickles and a zingy tartare with lots of dill."

Inside, the design is equally as considered, without straying into the territory of overdone. Graphic designer and illustrator Rosa Morgan has taken over the branding—including everything from the logo and signage to the burger wrappers. 

"Her beachy characters that are up on the walls and on our uniforms have been a huge hit," says Matt.

"Everyone wants a seagull hat."

Aside from the usual fish and chip shop staples, you'll also find a comprehensive bar offering that stems from the O.G. locations expertise. You can grab beer, soft drink, margarita slushies—and a spritz offering made in collab with Ester Spirits.

If vino is more your speed, order off the approachable wine list, or ask them to pull a vintage from the cellar (yes, you can do that).

And don't fret, dessert is never far away. Wander down the laneway and keep a lookout for the smiling neon icecream sign—you'll find a dedicated soft serve window, serving up Japanese Hokkaido milk soft-serve, with a range of toppings.
