Absinthe towers, oysters shucked tableside, a roving whisky cart, live music, and palm reading are all on the menu at Brooksy, a hidden hotel bar in the heart of the Sydney CBD.
Tucked into the Amora Hotel on Jamison Street, velvet booths, draped curtains, and Art Deco styling give Brooksy a prohibition-era aesthetic with a helping of 1920s-style glam.
To drink—alongside the signature Absinthe tower—award-winning cocktail shaker Brendon Hill has a list of signatures inspired by exotic destinations and far-flung places. "Uluru" is a fresh concoction of grapes, lemon, Campari, gin, and white vermouth, designed to capture the essence of the vast Australian landscape.
Feel the sea breeze and fragrance of olive trees with "Kalimera Yianni", inspired by Greece and made with cucumber, mint, lemon soda, and EVO oil. "Don't Go Chasin" is an ode to Jamaica, with pineapple rum, Cointreau, coconut, pineapple juice, orgeat syrup, and lime.
Other destinations on the menu include Ireland, Mexico, Alaska, and Japan—it's a real trip around the world.
To eat, a neat menu of snacks includes Yuzu scallops with ikura and wasabi, Glacier 51 toothfish with shiro miso and cucumber salsa, Jamaican jerk chicken sliders, and more.
Entertainment is a part of the Brooksy experience too, with aforementioned fortune tellers, tableside theatrics, and live bands all on the lineup.
