Buttered Sydney

Buttered is a modern Sydney bakery and cafe offering Korean pastries and top-notch drinks. Set in a minimalist warehouse space in Chippendale’s heritage-listed The Brewery, an open kitchen gives diners a front-row seat to the delicate pastry creations being formed.

Heading up the venue’s kitchen is Philip Choi, who perfected the pastry trade in Seoul’s best patisseries. Now, he’s bringing the viral Korean treats to Sydney’s CBD, displayed in a huge pastry counter taking centre stage: think sweet, buttery salt bread, flaky, croissant-style tissue bread, and light and airy waterfall cakes.

The star of the show is the viral Korean salt bread—a squishy, savoury bread bun with a golden exterior flecked with flaky sea salt, and filled with corn and cheese, cream, almond or spring onion and bacon.

The tissue bread is a close second: a pull-apart, cube-shaped croissant with countless individual layers, available with a variety of mouth-watering fillings like matcha, lemon meringue and salted caramel. The pretty-as-a-picture waterfall cakes are available in small single serves, in flavours including seasonal fruit, red velvet cheesecake, and tiramisu.

Pair your sweet treat with a ‘make your own’ house-made-ade—choices include green grape, lychee chamomile, mango and grapefruit syrup, topped with soda. Not into bubbles? Their ‘signature velvet’ is a decadent milk-based sip, with flavours like butterscotch, Dalgona (which you might recognise from Squid Game), and sweet corn.

Buttered is open Monday–Sunday, 9am–5pm, and is just a brisk walk from Central Station. We recommend popping in on your lunch break or making a day of it, as this viral spot is sure to be booked and busy.
