Charlie Parker's Merivale Paddington

The verdict

Sitting in the basement below Fred’s, Charlie Parker’s is Paddington’s newest local boasting stunning interiors and an impressive list of produce-driven cocktails that echo the menu upstairs. Behind the bar it’s Toby Marshall and Sam Egerton, both Palmer & Co. alums and makers of delicious, seasonal cocktails. 

Much of the magic is done back of house, with each and every element crafted with care (and love), so by the time it reaches you at the bar, it is executed to perfection.

The menu has been designed by Chef Danielle Alvarez (who’s heading up the kitchen upstairs in Fred’s) to compliments the drinks. Think Willowbrae feta with grapes and pickled chillies baked on lemon leaves and Jerusalem artichoke with green garlic and a daily changing flatbread. 

We recommend starting down in Charlie Parker’s for some pre dinner bevvies, before moving up to Fred’s, then maybe moving back downstairs afterwards. Hey, no judgement.

Bar Demo

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
