Daintree
A small bar with a big purpose, Daintree has partnered with environmental movement HalfCut to raise funds to protect rainforests and wildlife in conjunction with Traditional Owners, donating half of all its profits to the cause.
Expect a cocktail list featuring drinks with seasonal native ingredients and fresh herbs grown by the bar, with twists on classics like a gumnut Negroni, quandong daiquiri and a piña colada with coconut-washed white rum, macadamia butter and wattle seed.
Alongside the cocktails, the wine and beer list champions New South Wales producers and highlights minimal intervention and natural wines, with everything listed with its carbon miles noted.
