Beneath Glebe Point Road, one of Sydney’s most storied sites has been transformed into a lavish underground dining destination. Darling Glebe is the latest venture from celebrated chef and restaurateur Jeff Schroeter, bringing classic French technique, dramatic interiors and a serious martini program to the historic Darling Mills.

The 100-seat brasserie unfolds across a series of atmospheric rooms carved from sandstone and heritage brick, with soaring vaulted ceilings, velvet-lined columns, vintage glassware and softly glowing corners that capture both old-world elegance and modern indulgence. 

Kick things off in the Ferrari Martini Lounge, where a curved statement bar anchors the room and the cocktail list leans classic with a twist. Here, you'll find impeccably stirred martinis, signature serves and lounge-style seating that will keep you parked in one spot for the entire evening.  

Through the grand hallway, the main dining room features crisp white tablecloths, handcrafted timber tables and a collection of antique decanters and silk scarves lining the walls. The menu draws on Schroeter’s decades spent cooking across Europe, the US and Australia, blending refined French foundations with playful, nostalgic touches. Highlights range from heritage oyster dishes and buttery escargot pies to luxe takes on foie gras and a glossy duck à l’orange finished with native citrus notes.

Much of the produce is sourced directly from the Darling Mills farm, with occasional nods to the site’s historic family recipes—bringing a subtle sense of tradition into every service.

For a more intimate experience, the French-inspired omakase Chef’s Table runs on Wednesdays and Thursdays for just four guests at a time. It’s a personalised, ever-changing feast shaped around what’s freshest and most exciting that day, often featuring rare ingredients you won’t spot on the main menu.

Wine lovers will want to explore downstairs, where a purpose-built cellar is slowly being filled with bottles spanning old-world classics, special-occasion icons and discovery drops. Wrapped around it is an elegant private dining space made for long celebrations and special gatherings.
