The Verdict
If you’re looking to get a little cheeky with a side of class, the Darlo Country Club is just that. Brought to you by the brains behind The Lobo Plantation and The Island, this latest venture sees the swank of country club style making it’s way onto the Sydney bar scene. Complete with dark leather seats, linen panelling and a pastel pink entrance, this Darlinghurst bar and diner is the place to pop your polo collars along with a bottle of champers.
With genius, Julius Yates (Lobo Plantation) behind the drinks menu, the cocktails are sure to be a talking point with flames and smoke adding that little touch of drama we all crave. Cocktail musts include The Don, which combines Pampero Especial rum with passionfruit puree, ginger syrup and mint and the Eton Fizz made from Tanqueray gin, strawberry shrub, thyme syrup and egg white.
There's an equally as sophisticated brasserie menu available to accompany your cocktailing (if you so choose) which include the likes of a decadent lobster and truffle mac'n'cheese, smoky Moroccan style chicken as well as wagyu beef sliders. Yum!

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
