The Verdict

Spice up your regular night in, by heading out to track down Dirty Bird Food Truck. The duo behind Dirty Bird have fused southern flavours with Japanese techniques, serving up their Americasian (as they’re calling it) fare, which is so good, you’ll be craving a chicken run every single weekend. Are you even a Sydneysider if you can pass on a fried chicken burger? Probs not, TBH.

They serve dirty wings, which are southern-style wings with a mild (or hot—if you’re feeling brave) seasoning, served with a crunchy cabbage salad, with a fresh soy vinaigrette, as well as shoestring fries with umami salt, and a rich roasted chicken gravy with silky smooth potato mash. The main event (in our not-so-humble opinions) is the crack burger. As extreme as it sounds, this one involves a crispy rice battered chicken fillet (picture a rice bubble batter), topped with tomato, lettuce, Japanese pickle, and dill mayo, sandwiched between two halves of a cloud-like bun. 

Grab the squad and take your taste buds on a road trip to Southern America as you happily demolish a silky potato mash and gravy, salty shoestring fries and spicy fried chicken wings.
