The Verdict
Once home to a bootmaker, a pub and an opium den (yes really), Doss House is now an underground whisky bar sitting in the heart of the CBD. If you’re wondering about the name, a doss house is traditionally a place where sex workers could sleep for the night, and while it won’t be playing host this time around, the name is paying homage (once again) to the building’s colourful history.
Now, with that out of the way, here’s the low-down on the whisky. Behind the bar, there are 150 different whiskies—some local, some brewed in Melbourne and others from further afield. Unsurprisingly, there’s also a list of cocktails that make the most of the extensive whisky collection and you’ll be following it all up with their little menu of snacks and charcuterie boards. Sounds good, no?

Bar Demo
Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
