Parramatta’s historic core has a new reason to stop by. EUCA's Artisanal Pop-Up Boutique has opened inside The Stables at 85 George Street, bringing botanical-led gelato and finely tuned pastries into a sandstone setting that dates back to 1841.
Now calling Perth House & The Stables home, EUCA leans into the site’s old-world charm—thick sandstone walls, heritage bones, and a sense of stepping briefly out of time. It’s a fitting backdrop for a concept built to moves with Sydney's landscape and seasons.
Crafted by acclaimed pastry chef Miko Aspiras, EUCA’s gelato blends Italian precision with distinctly Australian ingredients.
Native botanicals and local produce shape a playful menu: Fior di Latte reimagined the EUCA way, macadamia butter praline, red berry and strawberry gum sorbet, Ispahan pistachio, Davidson plum-laced cioccolato fondente, mascarpone with saltbush, and pepperberry Basque cheesecake among the highlights.
Alongside the gelato cabinet, Chef Miko’s pastries, toasties and cakes round out the offering, supported by a curated selection of house-made beverages.
The pop-up forms part of the broader Freecity George Street precinct vision, an early activation designed to introduce culture and everyday rituals into the evolving neighbourhood.
