Four Pillars Gin And Drinks Lab
Four Pillars is one of a handful of Aussie gin distillers who, we feel, are largely responsible for our deep love of the delicious botanical spirit.
For starters, they gave us the now-iconic Bloody Shiraz Gin. Then, of course, there was the Christmas Gin and the Spiced Negroni Gin. And in 2019, the same legends announced they'd be opening their very first bar right here in Sydney.
Four Pillars Gin And Drinks Lab will be the distillery's first home away from home (the actual Four Pillars distillery is located in the Yarra Valley). As for which suburb is the lucky spot Four Pillars have picked to set up shop—Surry Hills is the winner. Its new resurgence of specialty bars, which covers the likes of Scout Sydney, Bartolo and Brix Distillers, will soon also include Four Pillars.
For now, precise details are scarce, but we do know that co-founders Stuart Gregor, Cameron Mackenzie and Matt Jones intend to transport the character and charm of their Healesville distillery door to Crown Street, along with a 70L still nicknamed Eileen. Sydney-based design studio Amber Road is looking after the interiors, and a whole lot of avant-garde Four Pillars cocktails are being specially developed by James Irvine, the group's bar master and creative director.
You'll also be able to shop gin-infused products, like marmalade, Gin Pig Salami and Hunted & Gathered chocolate in addition to bar kits, t-shirts, gin books and drinking miscellany. And, of course, there'll be masterclasses, tastings and gin gatherings to get around too.
Four Pillars Gin and Drinks Lab is slated to open early 2020.
