Fred’s is the latest venue by restaurant giants Merivale is unveiling their brand new double venue in Paddington, on Oxford Street. On the pans is Chef Danielle Alvarez, who earned herself the title as mother of the farm to table food movement as the owner of Californian restaurant Chez Panisse.
Unsurprisingly, she’s bringing her love of all things sustainability to Fred’s, enlisting like-minded chefs and local farmers who’ll supply the bulk of Fred’s ethically produced and all-natural fare.
Alvarez and her team will cook on free standing Tuscan grills and a custom-made hearth because cooking with fire means flavour and that’s what they are all about (yeah, us too). Looking after the 120-strong wine list (and our love of a great tipple) is Head Sommelier Caitlyn Rees and her focus will be on small-batch wines. There will also be an extensive and always changing selection of wines by the glass, so you can give a few a try while you’re there.
