The Verdict
Frenchie’s in Rosebery is the new kid on the block and they’re all about bringing the Parisian bistronomy culture to Sydney, at an affordable price. Well, we’re sold already.
Founded by two ‘Frenchies’ living in Australia, they aim to adapt traditional French cuisine to an Australian palette, which means that you can expect a LOT of beer and food pairings (they just get us). Head chef Thomas Cauquil is bringing his experience in Michelin Star restaurants to the bistro, whilst head brewer Vincent De Soyres combines his expertise from the Lyon brewing industry and numerous Australian breweries to his craft beers, which are all brewed on site.
The entire menu is designed around seasonal Australian produce, with an equal focus on both the plate and the glass. Opening on 24 August, we’re already gearing up to try the charcuterie board and the Midnight in Paris seasonal brew.

Bar Demo
Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
