The Verdict

Oh yeah, you read that right, Sydney just scored a late-night dumpling pop-up and 2018 is officially a winner. If you’re familiar with Harbin-style restaurant, Chulin, in Ultimo then you’re about to get really excited because they’ve just opened in Darlinghurst and that means it’s feast time. 

You can expect 16 varieties of seasonal dumplings to make an appearance on the menu, think gingko sausage puff; sea urchin and baby spinach dim sum; plus, prawn and cheese triangles. Yes, really. If dumplings aren’t really your jam though, we’re disappointed in you, but also recommend you hit up their signature dish, the Harbin-style Chinese wine sausage. Do you need any more convincing? No, you don’t.

The drinks menu has been designed to compliment the dumplings perfectly (obviously) and that means each cocktail Is based around a classic Chinese ingredient like the dragon’s breath cocktail that is made with Wyborowa vodka, dragon fruit, Coco Lopez, green tea foam and sesame seed. And that’s only one of eight, guys. There’s also an epic Australian wine list and just quietly, there’s a wine to pair perfectly with each dish, just ask the lovely wait staff. 

Ginkgo is currently open to the public for dinner.
