Served in fluffy, puffy stacks of three and likened to floating on a cloud—Japanese soufflé pancakes have been taking the dessert world (and Instagram) by storm for the past few years.
Sydney has mostly been left out of this dreamy, bouncy pancake heaven (Melbourne got a KumoKumo store last year)—but, at long last, our fat-stack prayers have been answered. Gram Pancakes, the iconic chain credited with creating some of the best soufflé stacks in Tokyo, has officially set up shop in Chatswood.
These guys are serious about the cloud-level consistency of their pancakes, shipping the brand’s executive chef to Sydney to teach the pancake’s intricate, complex cooking technique. It’s ultra-light to melt-in-your-mouth consistency is achieved with whipped egg white batter, that’s then steamed under metal domes and cooked until golden.
At Gram in Chatswood, you’ll have eight flavours to choose from, including tiramisu, matcha, caramelised banana and honey apple with earl grey cream.
While you’re clearly here for the pancakes, should you still be hungry, Gram also plate up French toast with chocolate and banana or strawberries, savoury pancakes (topped with bacon and eggs or salmon and avocado), parfaits and smoothies.
