The Details

Highlander Bar Sydney | Urban List Sydney

Highlander Bar will have you feeling as though you've stepped back in time to Sydney's colonial past. Or, that you've been teleported to a whisky den deep in the Scottish Highlands.

Housed within a historic, cosy room in the Sir Stamford Hotel, you'll find a solid variety of Scottish, Japanese, Taiwanese, American and Australian whiskies to sip by the fire.

Highlander Bar is a brilliant spot to indulge your love of whisky, or equally—to kick off your whisky journey. There are bi-monthly whisky masterclasses and rotating themed tastings. There's also a whisky high tea, which features whisky flights and an assortment of whisky infused treats (think Jack Daniels apple mousse slice, or traditional lemon-scented scones with clotted cream and Maker's Mark orange marmalade).

If you're feeling hungry, there's a menu of light snacks and more substantial meals on offer too. Order mushroom and truffle arancini or freshly shucked oysters as a pre-dinner snack, or go all in with an American style grill (pork, lamb or slow-cooked BBQ beef ribs).

Bar Demo

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
